2 English cucumbers, thinly sliced
1 teaspoon salt
1 red onion, thinly sliced
1 cup distilled white vinegar
½ cup water
¼ cup granulated sugar
2 tablespoons fresh dill, minced
OR
2-3 tsp dried dill
Season the cucumbers with salt in a large bowl and let them sweat for 1 hour. Drain the liquids and combine the cucumbers and onion slices.
In a small saucepan, over high heat, pour in the white vinegar and water. Stir in the sugar until it’s dissolved, ~3 to 5 minutes.
Pour over the cucumbers and onions. Stir in the dill. Cover and refrigerate for 1 hour. Serve cold or at room temperature.
